St George Spirits was founded in 1982, which is quite a venerable age for "artisan distillers" in the United States. Founded as distiller of eau de vie (fruit) spirits, they reputedly had worked on their absinthe recipe for 11 years when legalized in 2007.

St George Breaking & Entering bourbon is named for their self-described act of "barrel thieving." Bourbon--especially good bourbon--requires a great deal of aging an a large inventory from which to select barrels.Neither a large inventory nor time is something artisan distillers tend to have a lot of so their whiskeys are often blends of batch whiskey bought from a larger stock. Instead of hiding this fact, St George named their bourbon after it. They selected their own barrels from stocks in Kentucky and brought them back to California to blend. The result is a blend of "Kentucky pedigree and California ingenuity."

Breaking & Entering is a bright, spicy, not-too-sweet bourbon characterized by warm breakfast notes of maple, banana, butter, cinnamon, cloves. Cherry cola and eucalyptus/menthol are also present.
